Recipe for the homemade airy burger buns that will convince you to never buy readymades again

No matter what brand I bought I always found that the burger buns had several defaults. Most of them fall apart when you eat them, they are rather tasteless and tend to be dry. I have tried out several ways to do them myself and this recipe for homemade airy burger buns is a sure winner. I promise you can’t go back after having tried. They are soft, airy and tasty and they hold really well together until the end!:)

THE TIPS TO SUCCEED

1: Respect the mixing and resting time given in the recipe. The airyness is a result of respecting the time the dough actually needs

Let’s get started

Ingredients

  • 250 g Flour
  • ½ pk Fresh yeast or 12g
  • 1 ts Salt
  • 2 ts Sugar
  • 100 ml Water
  • 50 ml Milk
  • 2 pcs Egg (of which 1 is for brushing the dough)
  • 25 g Butter
  • Sesame seeds

How to do it

Put the butter to soften in room temperature

Add tempered water and milk together (it should be at your finger temperature, so around 37°c). Crumble the yeast into the water/milk mix and mix with a fork until dissolved. Cover up with plastic and let it rest for a few minutes

Then you add all the dry ingredients in the kitchen machine bowl. Add the water/milk/yeast and start mixing with the hook. Once you have mixed for a short moment, add 1 egg and keep mixing for a minute. Finally, add the soft butter and mix for another 5 minutes at medium speed.

Cover the bowl with plastic and let it rest for minimum 2 hours in room temperature

To shape the buns you start by dividing the dough into 4 equal parts. Roll out each part with your hand against the table and flatten them out when you place them on the tray covered with baking paper. Leave to rest for 1 hour.

Put the oven to heat at 200°c (Hot air)

Mix 1 egg yolk with a little bit of water and brush it on to the buns delicately and add sesame seeds on top. Cook for 10 minutes.

How to serve the homemade airy Burger Buns
