The Waffle is THE Norwegian classic dating from the early 19th century, and it is also the recipe that comes with most memories for me. I got my first recipe notebook when I was 10, and the first recipe I noted down was the Waffle recipe from my grandma. Well, at least what she estimated it to be as she never used any recipe when cooking it, and she changed it a bit now and then. It is typical for her recipes that the quantity of flour is stated to be “until the dough is sufficiently thick”:)
I cannot count the number of Waffles I have had at my grandma’s over the years and I have brought the tradition and the memories with me to France with joy. I love to take the Waffle iron out on the terrasse when we have friends over and serve freshly baked Norwegian Waffle with Raspberry Jam and Sour Cream.
THE TIPS TO SUCCEED
1: Make sure you add, by alternating, the milk and flour while whisking vigorously in order to reduce the risk of getting lumps
2: You should serve the Norwegian Waffle hot, straight from the iron! Cook and serve it live…

Ingredients
- 3 pcs Egg
- 150 ml Sugar
- 100 g Butter
- 500 ml Fermented Milk (Or normal milk fermented past expiry date)
- 500 ml Milk
- 1 tsp Baking Powder
- 1 tsp Vanilla Sugar
- 1 tsp Ground Cardamom
- 750 g Flour (Approx)
How to do it
Start by melting the butter and let it cool down.
Mix the eggs and sugar until thickened. Then add the melted butter.
Mix the flour, baking powder, vanilla sugar and cardamom. Then add, by alternating, the dry ingredients and the milk while whisking making sure to get no lumps.
Let the mixture rest for 15-20 minutes before cooking the Waffles in the waffle iron until light brown. You should be able to pour the mixture, but it should not be too think. You can always add more milk or flour after having cooked the first waffle to test.
How to serve the Norwegian Waffle
Serve them hot, straight from the iron with sour cream and homemade raspberry jam
